I was going to give it as a gift to a friend. lovely tribute to Bombay, not overly useful as a cookbook, Reviewed in the United States on November 12, 2019. The recipes are.
These recipes taste different, grounded in a specific regional culture. As a brit that has moved to the US, my only complaint would be that lots of recipes use ingredients that are hard to come by, especially in the US.
Dishoom devotees will be delighted to know that the famous House Black Daal (p.2014) has made it into the pages. However, I agree with another reviewer that the book was packaged HORRIBLY and this gorgeous book arrived a bit damaged. The chai is wonderful, the tomato chili jam comes out a little watery but tastes amazing (we modified the recipe a bit to can it as it’s wonderful), and the food tastes just like we were back in London eating away at the Dishoom restaurants. They were able to successfully convert their recipes for a home kitchen- not easy to do. This cookbook is hands down the best Indian cookbook I've owned. Packaging from my book would only get 3 stars as it made it here whole but battered. I've used a few recipes as inspiration in my own kitchen and have not been disappointed.
Every page is begging to be pored over and cooked from, each picture leaping from the page with atmosphere and generosity. The stories are lovely, the photography pulls you in, & the recipes are diverse and exciting. A list of alternative ingredients would have been super helpful! The tour takes you to places suitable for different meals and drinks (breakfast, snacks, lunch, and even fist, second and third dinners). Be sure to get a kitchen scale, quality ingredients and follow the recipes closely. If you find yourself at Dishoom, buy a copy, it's worth it to read on the train ride home! Taste is something that this family do very well; this book pays homage to an exciting authentic cuisine that I wish I could eat daily. ! This is a beautiful cookbook with lovely stories between recipes. The cookbook’s cocktail’s hark back to the style of “Bombay’s Jazz Age”, bringing them into the new age with flavour variations that ensure they pair perfectly with Dishoom dishes. Personal stories, documented histories, route guides and recommendations dart between much-loved recipes and mouth-watering images of dishes to be made, making us hungry and sending us off to make a cup of Masala Chai (p.86) before we can continue our journey. If you’re looking for something quicker to prepare, look no further than the East India Gimlet (p.326; London Dry Gin, Rose’s lime cordial, celery bitters, lime, dill garnish) – a bright and fresh classic that will go perfectly with most of the cookbook’s dishes. There's so much info and story in here written with wit and genuine joy. With so many people these days electing to simply Google recipes, Dishoom: From Bombay with Love is a stunning example of a tangible cookbook done right. This is a review of the much loved restaurant's first cookbook! Viceroy’s Old-Fashioned (p.342) is a definite highlight. I was born and raised in Delhi, and there has long been a rivalry between Delhi and Bombay. We LOVE dishoom. Dishoom’s cookbook is divided into 10 chapters; from Breakfast and Mid-Morning Snacks, right through Lunch and Sunset Snacks to three dinner chapters (we Asians aren’t known for brevity in dining) and finally Pudding and Tipples. Peppered with memories, it gives a brief account of family ties, how chef Naved Nasir came on board, the importance of shared spaces and how Bombay’s Irani cafés are – to him – a symbol of inclusion. If you’re looking to Exquisite - not just the recipes, which so far have all been delicious (although require a fair amount of forward planning), but also the vignettes that take you on a tour of Bombay.
